Description

A delicious breakfast that combines the flavors of carrot cake with wholesome oats, perfect for busy mornings.


Ingredients

  • 1 cup rolled oats
  • 1 cup grated carrots
  • 1 cup Greek yogurt (or dairy-free alternative)
  • 1 cup milk of choice (dairy or plant-based)
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped nuts (walnuts or pecans)
  • 1/4 cup raisins or dried cranberries (optional)


Instructions

  1. In a large mixing bowl, combine the rolled oats, grated carrots, Greek yogurt, and milk.
  2. Stir in the maple syrup and ground cinnamon until well mixed.
  3. If desired, fold in chopped nuts and raisins.
  4. Divide the mixture into jars or containers, cover, and refrigerate overnight.
  5. In the morning, stir and add an extra splash of milk if needed before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. You can also freeze the mixture before adding yogurt or toppings.
