Description

A delightful pasta salad featuring ranch dressing and beef bacon, perfect for picnics and potlucks.


Ingredients

  • 3 cups pasta (like rotini or penne)
  • 8 slices beef bacon, cooked and chopped
  • 1 cup ranch dressing
  • ½ cup Greek yogurt
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup cheddar cheese, shredded
  • ¼ cup green onions, sliced
  • Salt and pepper, to taste


Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente, according to package instructions. Drain and rinse under cold water.
  2. Prepare the beef bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate.
  3. Mix the ranch dressing and Greek yogurt in a bowl until well combined.
  4. Assemble the salad by combining the cooled pasta, cooked beef bacon, cherry tomatoes, cucumber, cheddar cheese, and green onions in a large bowl.
  5. Dress the salad with the dressing mixture and toss until well coated, seasoning with salt and pepper.
  6. Chill the salad in the refrigerator for at least 15 minutes before serving.

Notes

Store in an airtight container in the refrigerator for up to 4 days. For added flavor, sprinkle fresh herbs like parsley or dill before serving.
