A delightful pasta salad featuring ranch dressing and beef bacon, perfect for picnics and potlucks.
Ingredients
- 3 cups pasta (like rotini or penne)
- 8 slices beef bacon, cooked and chopped
- 1 cup ranch dressing
- ½ cup Greek yogurt
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup cheddar cheese, shredded
- ¼ cup green onions, sliced
- Salt and pepper, to taste
Instructions
- Cook the pasta in a large pot of salted boiling water until al dente, according to package instructions. Drain and rinse under cold water.
- Prepare the beef bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate.
- Mix the ranch dressing and Greek yogurt in a bowl until well combined.
- Assemble the salad by combining the cooled pasta, cooked beef bacon, cherry tomatoes, cucumber, cheddar cheese, and green onions in a large bowl.
- Dress the salad with the dressing mixture and toss until well coated, seasoning with salt and pepper.
- Chill the salad in the refrigerator for at least 15 minutes before serving.
