Ingredients
- 12 oz rigatoni pasta
- 1 lb Italian sausage (mild or spicy)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- Cook rigatoni according to package directions until al dente, then drain and set aside.
- In a large skillet, brown the Italian sausage over medium heat, breaking it apart as it cooks.
- Once browned, add the diced onion and minced garlic; sauté until the onion becomes translucent.
- Stir in the chicken broth and bring to a simmer. Gradually add the heavy cream, mixing until combined.
- Incorporate the grated Parmesan cheese and Italian seasoning, stirring until the cheese melts and forms a creamy sauce.
- Mix in the drained rigatoni, tossing to evenly coat the pasta in the sauce. Season with salt and pepper as needed.
- Allow it to simmer for an additional 2–3 minutes before removing from heat.
Notes
For a richer flavor, add a splash of white wine when sautéing the onions. For a vegetarian option, substitute the sausage with a plant-based alternative.
