A refreshing pasta salad featuring a creamy lemon dressing, perfect for picnics or potlucks.
Ingredients
- 12 oz elbow macaroni or any pasta of your choice
- 1 cup grated Parmesan cheese
- ¼ cup freshly squeezed lemon juice
- ½ cup sour cream
- ½ cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- Salt and black pepper to taste
- 1 cup diced bell peppers
- ½ cup chopped green onions
Instructions
- Begin by boiling a large pot of salted water. Cook the pasta until al dente, usually about 8-10 minutes. Drain and rinse under cold water to stop cooking.
- In a large bowl, whisk together the lemon juice, sour cream, mayonnaise, Dijon mustard, garlic powder, salt, and pepper.
- Add the cooked pasta to the bowl, followed by the Parmesan cheese and diced vegetables.
- Gently mix everything until the pasta is well coated in the creamy dressing.
- Taste and adjust seasoning if needed.
- Refrigerate for at least 30 minutes to allow flavors to meld together before serving.
