Description

A refreshing pasta salad featuring a creamy lemon dressing, perfect for picnics or potlucks.


Ingredients

  • 12 oz elbow macaroni or any pasta of your choice
  • 1 cup grated Parmesan cheese
  • ¼ cup freshly squeezed lemon juice
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 cup diced bell peppers
  • ½ cup chopped green onions


Instructions

  1. Begin by boiling a large pot of salted water. Cook the pasta until al dente, usually about 8-10 minutes. Drain and rinse under cold water to stop cooking.
  2. In a large bowl, whisk together the lemon juice, sour cream, mayonnaise, Dijon mustard, garlic powder, salt, and pepper.
  3. Add the cooked pasta to the bowl, followed by the Parmesan cheese and diced vegetables.
  4. Gently mix everything until the pasta is well coated in the creamy dressing.
  5. Taste and adjust seasoning if needed.
  6. Refrigerate for at least 30 minutes to allow flavors to meld together before serving.

Notes
