Ingredients
- 8 oz pasta of your choice (spaghetti or fettuccine)
- 1 cup ricotta cheese
- 2 tbsp fresh lemon juice
- 1 tbsp lemon zest
- 2 garlic cloves, minced
- 2 tbsp olive oil
- Fresh herbs (basil or parsley) for garnish
- Salt and black pepper to taste
Instructions
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta cooks, heat olive oil in a pan over medium heat and sauté minced garlic until fragrant.
- In a bowl, combine ricotta, lemon juice, lemon zest, salt, and pepper.
- Once the pasta is ready, reserve some pasta water, then drain the pasta.
- Add the hot pasta directly to the ricotta mixture and toss to combine, using reserved pasta water as needed to achieve the desired creaminess.
- Serve immediately, garnished with fresh herbs and an extra drizzle of olive oil.
Notes
