Description

A delightful pasta dish featuring creamy ricotta and zesty lemon, perfect for weeknight dinners.


Ingredients

  • 8 oz pasta of your choice (spaghetti or fettuccine)
  • 1 cup ricotta cheese
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • Fresh herbs (basil or parsley) for garnish
  • Salt and black pepper to taste


Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta cooks, heat olive oil in a pan over medium heat and sauté minced garlic until fragrant.
  3. In a bowl, combine ricotta, lemon juice, lemon zest, salt, and pepper.
  4. Once the pasta is ready, reserve some pasta water, then drain the pasta.
  5. Add the hot pasta directly to the ricotta mixture and toss to combine, using reserved pasta water as needed to achieve the desired creaminess.
  6. Serve immediately, garnished with fresh herbs and an extra drizzle of olive oil.

Notes

For added protein, consider grilled chicken or sautéed shrimp.
