Ingredients
- 4 large potatoes, peeled and diced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled (substitute with turkey bacon for a lighter option)
- 1/4 cup chopped chives
- Salt and pepper to taste
Instructions
- In a large pot, bring the chicken or vegetable broth to a simmer over medium heat. Add the diced potatoes and cook until they are tender, about 15-20 minutes.
- Once the potatoes are soft, use a potato masher to mash some of them, leaving about half of them intact for a chunky texture.
- Stir in the heavy cream, shredded cheese, and crumbled bacon. Cook until the cheese melts and the soup is heated through.
- Season with salt and pepper to your liking. Before serving, adorn your soup with fresh chives for an added touch of color and flavor.
Notes
Consider adding a splash of hot sauce for heat or some garlic powder for an extra kick! For a thicker soup, blend some or all of the mixture after cooking.
