Description

A warm and comforting bowl of creamy loaded baked potato soup, perfect for chilly evenings and family gatherings.


Ingredients

  • 4 large potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled (substitute with turkey bacon for a lighter option)
  • 1/4 cup chopped chives
  • Salt and pepper to taste


Instructions

  1. In a large pot, bring the chicken or vegetable broth to a simmer over medium heat. Add the diced potatoes and cook until they are tender, about 15-20 minutes.
  2. Once the potatoes are soft, use a potato masher to mash some of them, leaving about half of them intact for a chunky texture.
  3. Stir in the heavy cream, shredded cheese, and crumbled bacon. Cook until the cheese melts and the soup is heated through.
  4. Season with salt and pepper to your liking. Before serving, adorn your soup with fresh chives for an added touch of color and flavor.

Notes

Consider adding a splash of hot sauce for heat or some garlic powder for an extra kick! For a thicker soup, blend some or all of the mixture after cooking.
