Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup sun-dried tomatoes, chopped
- 1 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Olive oil for cooking
- Fresh basil for garnish (optional)
Instructions
- Season the chicken breasts with salt and pepper.
- In a skillet over medium heat, add olive oil and sear the chicken for 6-7 minutes on each side until golden brown. Remove from the pan and set aside.
- In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for about a minute until fragrant.
- Pour in the chicken broth, followed by the heavy cream. Stir thoroughly to combine.
- Add the Parmesan cheese and dried oregano. Mix until the sauce is smooth and heated through.
- Return the chicken to the skillet and coat it in the sauce. Allow it to simmer for 10-15 minutes until the chicken is cooked through.
- Garnish with fresh basil before serving.
Notes
For a twist, try swapping sun-dried tomatoes for roasted red peppers or using different cheeses like feta or goat cheese.
