Ingredients

  • 1 pound Italian sausage (mild or spicy)
  • 1 cup ditalini pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat. Add the Italian sausage and cook until golden brown. Drain any excess fat.
  2. Toss in the chopped onion and minced garlic, sautéing until the onion is soft and translucent.
  3. Pour in the chicken broth and bring to a rolling boil.
  4. Add the ditalini pasta, cooking according to package instructions until al dente.
  5. Lower the heat and pour in the heavy cream and grated Parmesan cheese. Stir until the cheese melts and the soup is creamy.
  6. Season with Italian seasoning, salt, and pepper to taste.
  7. Serve warm, garnished with fresh parsley.

For a lighter version, consider using ground turkey sausage or substituting half and half for heavy cream. To make it vegetarian, use plant-based sausage and vegetable broth.
