A rich and creamy soup made with Italian sausage, ditalini pasta, and Parmesan cheese, perfect for chilly evenings and busy weeknights.
Ingredients
- 1 pound Italian sausage (mild or spicy)
- 1 cup ditalini pasta
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Add the Italian sausage and cook until golden brown. Drain any excess fat.
- Toss in the chopped onion and minced garlic, sautéing until the onion is soft and translucent.
- Pour in the chicken broth and bring to a rolling boil.
- Add the ditalini pasta, cooking according to package instructions until al dente.
- Lower the heat and pour in the heavy cream and grated Parmesan cheese. Stir until the cheese melts and the soup is creamy.
- Season with Italian seasoning, salt, and pepper to taste.
- Serve warm, garnished with fresh parsley.
Notes
For a lighter version, consider using ground turkey sausage or substituting half and half for heavy cream. To make it vegetarian, use plant-based sausage and vegetable broth.
