Description

A delightful pasta salad with a creamy dressing, fresh vegetables, and hearty pasta, perfect for any occasion.


Ingredients

  • 2 cups pasta (short shapes like rotini or penne)
  • 1 cup fresh vegetables (bell peppers, cucumbers, and cherry tomatoes)
  • ¼ cup green onions or red onion, chopped
  • 1 cup cheddar or mozzarella cheese, diced
  • ½ cup mayonnaise
  • ½ cup sour cream or Greek yogurt
  • 2 tablespoons fresh herbs (dill or parsley), chopped
  • Salt and pepper to taste


Instructions

  1. Begin by cooking the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large bowl, combine your chopped vegetables, cheese, and cooked pasta.
  3. In a separate bowl, whisk together the mayonnaise, sour cream or Greek yogurt, salt, pepper, and chopped herbs.
  4. Pour the dressing over the pasta mixture, and gently toss to combine everything evenly.
  5. Let the salad chill in the refrigerator for at least 30 minutes for the flavors to enhance.
  6. Before serving, give it another gentle toss and adjust seasoning if needed.

Notes

Feel free to customize with other vegetables or swaps based on your preferences. Letting the salad chill for longer than 30 minutes can deepen the flavors.
