Description

This creamy pasta dish blends tender chicken and vibrant pesto, creating a meal that feels indulgent yet remains straightforward to prepare. Perfect for family gatherings or a satisfying weeknight dinner.

Ingredients

  • 12 oz pasta of choice (penne or fettuccine)
  • 2 chicken breasts, diced
  • 1 cup pesto (store-bought or homemade)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tablespoon Olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Heat a tablespoon of olive oil in a large skillet over medium heat. Add the diced chicken, seasoning with salt and pepper. Cook until browned and cooked through, about 7-10 minutes.
  3. Reduce the heat, then stir in the pesto and heavy cream. Mix well to combine.
  4. Add the cooked pasta to the skillet, tossing everything together to coat. Stir in the grated Parmesan cheese until melted and creamy.
  5. Taste and adjust seasoning, if necessary, before serving.

Notes

Feel free to experiment with ingredients! Consider adding vegetables such as spinach or sun-dried tomatoes for extra color and nutrition. You can substitute chicken for shrimp or plant-based protein.
