Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, diced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 cups extra sharp cheddar cheese, shredded
- 4 slices of bacon, cooked and crumbled
- 1/4 cup chives, chopped
- Salt and pepper to taste
Instructions
- In a large pot, combine the diced potatoes and onion with the broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Using a potato masher, mash some of the potatoes for a thicker consistency while leaving some chunks for texture.
- Pour in the heavy cream and cheddar cheese, stirring until the cheese has melted and the soup is creamy.
- Season with salt and pepper to taste.
- Serve hot, garnished with crumbled bacon and chopped chives.
Notes
For a vegetarian option, substitute chicken broth with vegetable broth and omit bacon.
