Description

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 cups extra sharp cheddar cheese, shredded
  • 4 slices of bacon, cooked and crumbled
  • 1/4 cup chives, chopped
  • Salt and pepper to taste


Instructions

  1. In a large pot, combine the diced potatoes and onion with the broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  2. Using a potato masher, mash some of the potatoes for a thicker consistency while leaving some chunks for texture.
  3. Pour in the heavy cream and cheddar cheese, stirring until the cheese has melted and the soup is creamy.
  4. Season with salt and pepper to taste.
  5. Serve hot, garnished with crumbled bacon and chopped chives.

Notes

For a vegetarian option, substitute chicken broth with vegetable broth and omit bacon.
