Ingredients
- 6 medium red potatoes, peeled and diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream

Instructions
- Melt the butter in a large pot over medium heat.
- Add the chopped onions and minced garlic, and sauté until the onions turn translucent.
- Stir in the diced red potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are tender (about 15-20 minutes).
- Puree the soup using an immersion blender until smooth. Alternatively, transfer to a regular blender in batches, being cautious with hot liquid.
- Stir in the heavy cream and season with salt and pepper to taste.

Consider adding herbs like thyme or rosemary for extra flavor. You can also reserve diced potatoes before blending for added texture.
