Ingredients
- Rotisserie chicken (shredded)
- Broccoli florets
- Pasta of choice (like penne or rotini)
- Cream cheese
- Chicken broth
- Parmesan cheese
- Garlic (minced)
- Olive oil
- Salt
- Pepper
- Optional: red pepper flakes for heat
Instructions
- Cook the pasta according to the package instructions. Drain, reserving a bit of the pasta water.
- In a large skillet, heat olive oil over medium heat. Add the garlic and sauté until fragrant.
- Add the broccoli and cook until tender, about 4-5 minutes.
- Incorporate the shredded chicken and stir until warmed through.
- Lower the heat, then mix in the cream cheese and chicken broth. Stir until smooth.
- Combine the pasta into the skillet. If needed, add reserved pasta water to reach desired consistency.
- Finish with Parmesan cheese, salt, and pepper. Stir until everything is well combined.
Notes
Serve warm, garnished with additional Parmesan and freshly cracked pepper. Pairs well with a side salad or garlic bread.
