Description

A hearty and creamy pasta dish made with rotisserie chicken and fresh vegetables, perfect for busy weeknights.


Ingredients

  • Rotisserie chicken (shredded)
  • Broccoli florets
  • Pasta of choice (like penne or rotini)
  • Cream cheese
  • Chicken broth
  • Parmesan cheese
  • Garlic (minced)
  • Olive oil
  • Salt
  • Pepper
  • Optional: red pepper flakes for heat


Instructions

  1. Cook the pasta according to the package instructions. Drain, reserving a bit of the pasta water.
  2. In a large skillet, heat olive oil over medium heat. Add the garlic and sauté until fragrant.
  3. Add the broccoli and cook until tender, about 4-5 minutes.
  4. Incorporate the shredded chicken and stir until warmed through.
  5. Lower the heat, then mix in the cream cheese and chicken broth. Stir until smooth.
  6. Combine the pasta into the skillet. If needed, add reserved pasta water to reach desired consistency.
  7. Finish with Parmesan cheese, salt, and pepper. Stir until everything is well combined.

Notes

Serve warm, garnished with additional Parmesan and freshly cracked pepper. Pairs well with a side salad or garlic bread.
