Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 1 cup chicken broth
- 1 cup heavy cream
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with salt, pepper, and paprika for an even coating.
- Heat the olive oil in a large skillet over medium-high heat. Cook the chicken for 6-7 minutes on each side until golden brown. Remove and set aside.
- Sauté the chopped onion in the same skillet for 2-3 minutes until translucent, then add minced garlic and cook for an additional minute.
- Stir in the rice for a minute, then add the chicken broth and heavy cream, mixing well.
- Return the chicken to the skillet, spooning rice mixture over each piece.
- Cover and simmer on low for about 25 minutes, until the rice is tender and liquid is absorbed.
- Garnish with freshly chopped parsley before serving.
Notes
Feel free to use fat-free cream for a lighter version. For extra flavor, consider marinating the chicken overnight or use pre-cooked rotisserie chicken for quicker preparation.
