Description

A comforting meal of tender chicken and perfectly cooked rice in a luscious sauce, ideal for family gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Season the chicken breasts with salt, pepper, and paprika for an even coating.
  2. Heat the olive oil in a large skillet over medium-high heat. Cook the chicken for 6-7 minutes on each side until golden brown. Remove and set aside.
  3. Sauté the chopped onion in the same skillet for 2-3 minutes until translucent, then add minced garlic and cook for an additional minute.
  4. Stir in the rice for a minute, then add the chicken broth and heavy cream, mixing well.
  5. Return the chicken to the skillet, spooning rice mixture over each piece.
  6. Cover and simmer on low for about 25 minutes, until the rice is tender and liquid is absorbed.
  7. Garnish with freshly chopped parsley before serving.

Notes

Feel free to use fat-free cream for a lighter version. For extra flavor, consider marinating the chicken overnight or use pre-cooked rotisserie chicken for quicker preparation.
