Description

A creamy and comforting bowl of Southern black-eyed peas, perfect for New Year’s Day or any hearty meal.


Ingredients

  • 1 cup dried black-eyed peas
  • 4 cups water or broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 ham hock or smoked sausage (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • 1 bay leaf


Instructions

  1. Rinse the black-eyed peas thoroughly and soak them in water for at least 4 hours or overnight to soften them.
  2. In your Instant Pot, heat the olive oil using the sauté mode. Add the diced onion and minced garlic, cooking until they are softened and fragrant.
  3. Add the soaked black-eyed peas, followed by the water or broth, ham hock or sausage (if using), salt, black pepper, paprika, and bay leaf.
  4. Secure the lid on your Instant Pot and set it to manual mode for 15 minutes.
  5. Allow the pressure to release naturally.
  6. Once done, remove the ham hock or sausage, shred it if desired, and give everything a good stir to blend the flavors.
  7. Serve warm and enjoy!

Notes

To make a vegetarian version, omit the ham hock or sausage and use vegetable broth.
