Description
A creamy and comforting bowl of Southern black-eyed peas, perfect for New Year’s Day or any hearty meal.
Ingredients
- 1 cup dried black-eyed peas
- 4 cups water or broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 ham hock or smoked sausage (optional)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 tablespoon olive oil
- 1 bay leaf
Instructions
- Rinse the black-eyed peas thoroughly and soak them in water for at least 4 hours or overnight to soften them.
- In your Instant Pot, heat the olive oil using the sauté mode. Add the diced onion and minced garlic, cooking until they are softened and fragrant.
- Add the soaked black-eyed peas, followed by the water or broth, ham hock or sausage (if using), salt, black pepper, paprika, and bay leaf.
- Secure the lid on your Instant Pot and set it to manual mode for 15 minutes.
- Allow the pressure to release naturally.
- Once done, remove the ham hock or sausage, shred it if desired, and give everything a good stir to blend the flavors.
- Serve warm and enjoy!
Notes
To make a vegetarian version, omit the ham hock or sausage and use vegetable broth.
