Description

A comforting slow cooker meal combining succulent chicken, vibrant vegetables, and tender orzo, perfect for busy weeknights.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 2 cups vegetable broth (or chicken broth)
  • 1 cup heavy cream (or a plant-based alternative)
  • 1 teaspoon Italian seasoning
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon minced garlic
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)


Instructions

  1. Prepare the chicken: Place the chicken breasts at the bottom of the slow cooker. Season with salt, pepper, and Italian seasoning.
  2. Add the broth and garlic: Pour in the vegetable or chicken broth and add the minced garlic.
  3. Cook: Cover and cook on low for 6 hours or high for about 3 hours.
  4. Incorporate orzo: About 30 minutes before serving, stir in the orzo. Make sure it’s fully submerged in the cooking liquid.
  5. Finish with cream and greens: Once the orzo is tender, mix in the heavy cream, spinach, and cherry tomatoes. Let it cook for another 10 minutes.
  6. Garnish and serve: Break the chicken into pieces if desired, garnish with fresh basil, and enjoy.

Notes

Pairs well with a crisp green salad or warm crusty bread. Leftovers can be stored in the refrigerator for up to three days or frozen for three months.
