Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 cup orzo pasta
- 2 cups vegetable broth (or chicken broth)
- 1 cup heavy cream (or a plant-based alternative)
- 1 teaspoon Italian seasoning
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 1 tablespoon minced garlic
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Prepare the chicken: Place the chicken breasts at the bottom of the slow cooker. Season with salt, pepper, and Italian seasoning.
- Add the broth and garlic: Pour in the vegetable or chicken broth and add the minced garlic.
- Cook: Cover and cook on low for 6 hours or high for about 3 hours.
- Incorporate orzo: About 30 minutes before serving, stir in the orzo. Make sure it’s fully submerged in the cooking liquid.
- Finish with cream and greens: Once the orzo is tender, mix in the heavy cream, spinach, and cherry tomatoes. Let it cook for another 10 minutes.
- Garnish and serve: Break the chicken into pieces if desired, garnish with fresh basil, and enjoy.
Notes
Pairs well with a crisp green salad or warm crusty bread. Leftovers can be stored in the refrigerator for up to three days or frozen for three months.
