Description

Crispy on the outside and tender within, these canned salmon patties are a quick and delicious comfort food that’s perfect for any occasion.


Ingredients

  • 1 can (15 ounces) salmon, drained and flaked
  • 1/2 cup finely chopped yellow onion
  • 1 large egg, lightly beaten
  • 1/2 cup breadcrumbs
  • 1 tablespoon mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil for frying


Instructions

  1. In a medium bowl, combine the flaked salmon, chopped onion, beaten egg, breadcrumbs, mayonnaise, lemon juice, salt, and pepper. Mix thoroughly until no dry spots remain.
  2. Form the mixture into four equal patties, each about 3/4-inch thick.
  3. Heat vegetable oil in a skillet over medium heat until hot.
  4. Carefully place the patties in the skillet and cook for 3 to 4 minutes on each side, or until they achieve a golden-brown color and are heated through.
  5. Once cooked, drain on paper towels and serve hot.

Notes

For a gluten-free option, use gluten-free breadcrumbs. These patties can be stored in an airtight container in the fridge for 2-3 days or frozen for up to 2 months.
