Ingredients
- 1 can (15 ounces) salmon, drained and flaked
- 1/2 cup finely chopped yellow onion
- 1 large egg, lightly beaten
- 1/2 cup breadcrumbs
- 1 tablespoon mayonnaise
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons vegetable oil for frying
Instructions
- In a medium bowl, combine the flaked salmon, chopped onion, beaten egg, breadcrumbs, mayonnaise, lemon juice, salt, and pepper. Mix thoroughly until no dry spots remain.
- Form the mixture into four equal patties, each about 3/4-inch thick.
- Heat vegetable oil in a skillet over medium heat until hot.
- Carefully place the patties in the skillet and cook for 3 to 4 minutes on each side, or until they achieve a golden-brown color and are heated through.
- Once cooked, drain on paper towels and serve hot.
Notes
For a gluten-free option, use gluten-free breadcrumbs. These patties can be stored in an airtight container in the fridge for 2-3 days or frozen for up to 2 months.
