Description

Tender chicken breasts filled with a creamy spinach and cheese mixture, wrapped in crispy bacon—a nostalgic favorite perfect for family dinners.

Ingredients

  • 4 chicken breasts
  • 4 ounces cream cheese (softened)
  • 1 cup fresh spinach (chopped)
  • 4 strips of bacon (cooked and crumbled)
  • Salt, to taste
  • Pepper, to taste
  • Garlic powder, to taste
  • 1 cup cheese (shredded, optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Use a meat mallet to gently flatten each chicken breast for even cooking.
  3. Spread a generous layer of cream cheese onto each flattened chicken breast.
  4. Add a handful of chopped spinach and top with crumbled bacon.
  5. Roll the chicken up tightly, ensuring the filling stays inside, and secure with toothpicks.
  6. Arrange the roll-ups in a baking dish, seasoning with salt, pepper, and garlic powder.
  7. Pop them in the oven and bake for 25-30 minutes or until fully cooked.
  8. If desired, add shredded cheese on top and bake for an additional 5 minutes until bubbly and golden.

Notes

Consider marinating the chicken breasts for extra flavor. You can use pre-cooked bacon or deli meats to save time. Let the roll-ups rest after baking to ensure they remain juicy.
