Description

Crispy chicken breasts coated in dill pickle seasoning, offering a delightful crunch and tangy flavor.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup dill pickles, sliced
  • 1 cup Parmesan cheese, grated
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 eggs, beaten
  • Olive oil or cooking spray


Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper or a light coat of cooking spray.
  2. In one bowl, mix together the panko breadcrumbs, garlic powder, onion powder, salt, and pepper.
  3. In another bowl, place beaten eggs.
  4. Dip each chicken breast into the egg, then coat it thoroughly in the breadcrumb mixture.
  5. Place the coated chicken on the baking sheet and top each piece with dill pickle slices.
  6. Sprinkle a generous amount of Parmesan over each chicken breast.
  7. Lightly drizzle olive oil over the top if desired for an extra crispy finish.
  8. Bake for 20-25 minutes or until the chicken is golden brown and reaches an internal temperature of 165°F (75°C).

Notes

Consider replacing Parmesan with a vegan option for a plant-based version. For extra flavor, marinate the chicken in pickle juice before preparation.
