Description

A delightful fusion of savory and tangy flavors with a golden, crispy exterior and tender chicken inside.


Ingredients

  • 4 chicken breasts
  • 1 cup dill pickle chips
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 eggs
  • Salt and pepper to taste
  • Cooking spray or oil for baking


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a food processor, pulse the dill pickle chips until finely chopped.
  3. In a bowl, beat the eggs until fluffy.
  4. In another bowl, combine the breadcrumbs and grated Parmesan cheese.
  5. Take each chicken breast, dip it into the eggs, then coat it in the chopped dill pickles followed by the breadcrumb and cheese mixture.
  6. Place the coated chicken on a baking sheet lined with parchment paper.
  7. Lightly spray the tops with cooking spray for extra crispiness.
  8. Bake for 25-30 minutes until the chicken is cooked through and the coating is golden brown.
  9. Serve it hot for an unbeatable crunch!

Notes

For extra crunch, double-coat the chicken with the pickle and breadcrumb mixture. You can also substitute chicken breasts with thighs for a juicier bite.
