Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup breadcrumbs (plain or seasoned)
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1/4 cup all-purpose flour
- Olive oil (for frying)
- Salt and pepper (to taste)
Instructions
- Preheat your oven to 400°F (200°C).
- Set up a breading station with three shallow bowls: one for the flour, one for beaten eggs, and the last for a mixture of breadcrumbs and Parmesan cheese.
- Season the chicken breasts with salt and pepper before dredging each piece in flour, then dipping it in the egg, and finally coating it in the breadcrumb mix.
- Heat olive oil in a large skillet over medium heat. Carefully add the coated chicken and cook until golden brown on both sides, about 4 to 5 minutes per side.
- Transfer to a baking sheet and finish cooking in the oven until the chicken reaches an internal temperature of 165°F (74°C).
Notes
For extra crunch, mix in crushed cornflakes or panko breadcrumbs with the standard breadcrumbs. Ensure the oil is hot to prevent sticking.
