Ingredients
- 1 lb ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 2 cups shredded cheese (cheddar or Mexican blend)
- 4 flour tortillas
- Oil for frying
- Optional toppings: sour cream, salsa, guacamole
Instructions
- In a skillet, heat some oil over medium heat and add the chopped onion. Sauté until translucent.
- Add minced garlic, followed by the ground beef. Cook until the beef is browned and crumbly.
- Stir in cumin and chili powder; mix well.
- Remove from heat and stir in shredded cheese until melted.
- Spoon the beef mixture onto tortillas and roll them up tightly, securing the filling.
- Heat oil in a frying pan. Carefully place the rolls seam-side down, frying until golden and crispy on all sides.
- Drain on paper towels before serving.
Notes
For crispy chimichangas, ensure the oil is hot enough before frying and avoid overcrowding the pan. You can also bake them at 400°F (200°C) for a healthier option.
