Description

Savory beef wrapped in crispy tortillas with melted cheese, perfect for gatherings and family dinners.


Ingredients

  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 4 flour tortillas
  • Oil for frying
  • Optional toppings: sour cream, salsa, guacamole


Instructions

  1. In a skillet, heat some oil over medium heat and add the chopped onion. Sauté until translucent.
  2. Add minced garlic, followed by the ground beef. Cook until the beef is browned and crumbly.
  3. Stir in cumin and chili powder; mix well.
  4. Remove from heat and stir in shredded cheese until melted.
  5. Spoon the beef mixture onto tortillas and roll them up tightly, securing the filling.
  6. Heat oil in a frying pan. Carefully place the rolls seam-side down, frying until golden and crispy on all sides.
  7. Drain on paper towels before serving.

Notes

For crispy chimichangas, ensure the oil is hot enough before frying and avoid overcrowding the pan. You can also bake them at 400°F (200°C) for a healthier option.
