Ingredients
- 12 taco shells
- 1 pound ground beef
- 1 tablespoon taco seasoning (store-bought or homemade)
- 1 cup refried beans (optional)
- 1 cup shredded cheese (cheddar or a blend)
- 1 cup diced tomatoes
- 1 cup shredded lettuce
- Sour cream for serving
- Salsa for serving
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, brown the ground beef. Drain any excess fat.
- Stir in the taco seasoning and cook according to package instructions. If using, add refried beans and mix until heated through.
- Assemble the tacos: spoon the meat mixture into the taco shells and place them upright in a baking dish.
- Sprinkle shredded cheese over the top of each taco.
- Bake for about 15 minutes or until the cheese is bubbly and golden.
- Remove from the oven and top with diced tomatoes and shredded lettuce.
- Serve with sour cream and salsa.
Notes
For extra flavor, you can sauté onions or garlic with the ground beef. Baking a double batch is a great idea for quick future meals.
