Description

A delightful weeknight dinner featuring chicken coated in crispy parmesan and smothered in a rich garlic sauce.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup of parmesan cheese, grated
  • 1 cup of breadcrumbs (panko works well)
  • 2 cloves of garlic, minced
  • 1/4 cup of butter
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: lemon wedges for serving


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix the grated parmesan cheese and breadcrumbs with a pinch of salt and pepper.
  3. Dredge each chicken breast in the breadcrumb mixture until fully coated.
  4. In a skillet over medium heat, melt half the butter and add the chicken. Cook until golden on both sides, about 4-5 minutes per side.
  5. Once the chicken is browned, transfer it to a baking dish and finish cooking in the oven for 15-20 minutes or until the internal temperature reaches 165°F (75°C).
  6. In the same skillet, add the rest of the butter and minced garlic, sautéing briefly before adding it over the chicken during the last few minutes of baking.
  7. Serve hot, garnished with parsley.

Notes

For added freshness, a squeeze of lemon juice over the top before serving can enhance the flavors remarkably.
