Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup Shake and Bake coating mix
- 2 large eggs
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Lightly spray a baking dish with nonstick cooking spray to prevent sticking.
- In a bowl, whisk together the eggs until well combined.
- Pour the Shake and Bake coating mix into another bowl.
- Take each chicken breast, dip it in the egg mixture, and then coat it thoroughly with the Shake and Bake mix.
- Arrange the coated chicken breasts in the prepared baking dish. Drizzle with olive oil.
- Bake in the preheated oven for 25-30 minutes or until golden brown, ensuring the internal temperature reaches 165°F (74°C).
- Let the chicken rest for five minutes before serving.
Notes
For extra crunch, broil the chicken for the last 2-3 minutes of cooking. You can also try mixing garlic powder or paprika into the coating for added flavor.
