Ingredients
- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 1/2 cup low-sodium soy sauce
- 1/4 cup packed light brown sugar
- 1 can (10.5 oz) cream of chicken soup
- Salt and pepper to taste
- 2 tsp Italian seasoning
- 2 tbsp unsalted butter
- Fresh parsley (optional for garnish)
Instructions
- Layer the chicken by placing the chicken breasts at the bottom of the crock pot.
- Sprinkle minced garlic, salt, pepper, brown sugar, and Italian seasoning over the chicken.
- In a separate bowl, combine the soy sauce and cream of chicken soup until smooth. Pour this mixture over the seasoned chicken.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender and easily shredded.
- Once cooked, shred the chicken with two forks and serve over rice or pasta for a hearty meal.
Notes
For thicker sauce, remove the lid in the last hour of cooking. You can substitute cream of chicken soup with Greek yogurt for a healthier option.
