Ingredients
- 3-4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1/2 cup low-sodium soy sauce
- 1/2 cup bourbon
- 1/4 cup brown sugar
- 2 tbsp honey
- 1 tsp ground ginger
Instructions
- Dice the chicken breasts into bite-sized pieces.
- In a mixing bowl, combine soy sauce, bourbon, brown sugar, honey, minced garlic, and ground ginger, whisking until smooth.
- Place the diced chicken in your Crock Pot and pour the sauce over the top.
- Cover and cook on low for 5 hours or high for 3 hours.
- If a thicker sauce is desired, simmer some of the liquid in a saucepan over medium heat until reduced to your desired consistency.
- Serve over rice or sautéed vegetables, drizzling with additional sauce for extra flavor.
Notes
For a non-alcoholic version, substitute bourbon with apple cider vinegar. Marinate chicken for enhanced flavor and consider searing it before placing in the Crock Pot.
