Description

Ingredients

  • 3-4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/2 cup low-sodium soy sauce
  • 1/2 cup bourbon
  • 1/4 cup brown sugar
  • 2 tbsp honey
  • 1 tsp ground ginger


Instructions

  1. Dice the chicken breasts into bite-sized pieces.
  2. In a mixing bowl, combine soy sauce, bourbon, brown sugar, honey, minced garlic, and ground ginger, whisking until smooth.
  3. Place the diced chicken in your Crock Pot and pour the sauce over the top.
  4. Cover and cook on low for 5 hours or high for 3 hours.
  5. If a thicker sauce is desired, simmer some of the liquid in a saucepan over medium heat until reduced to your desired consistency.
  6. Serve over rice or sautéed vegetables, drizzling with additional sauce for extra flavor.

Notes

For a non-alcoholic version, substitute bourbon with apple cider vinegar. Marinate chicken for enhanced flavor and consider searing it before placing in the Crock Pot.
