A comforting and flavorful dish of tender chicken thighs cooked in a sweet and savory bourbon sauce, perfect for busy weeknights and gatherings.
Ingredients
- 3 pounds Boneless, skinless Chicken Thighs
- 1 cup Light Brown Sugar
- 1 cup Soy Sauce
- 1/3 cup Bourbon Whisky
- 2 tablespoons Apple Cider Vinegar
- 1/2 teaspoon Ground Ginger
- 1 tablespoon Honey
- 1/2 teaspoon Red Pepper Flakes
- 4 Cloves Garlic (minced)
- 3 tablespoons Cornstarch
- 2 tablespoons Water
- 1/4 cup Green Onions (for garnish)
Instructions
- Place the well-trimmed chicken thighs into the slow cooker.
- In a medium bowl, whisk the remaining ingredients, excluding the cornstarch, water, and green onions.
- Pour the sauce over the chicken thighs.
- Cover and cook on high for 4 hours or low for 6 hours.
- Once done, remove the chicken to a plate and chop roughly.
- In a separate bowl, mix the cornstarch and water until dissolved.
- Pour this mixture into the sauce in the crock pot and whisk to combine.
- Return the chopped chicken to the crock pot, stirring well. Cover and let it bubble for a few minutes before turning off the slow cooker.
- Sprinkle with chopped green onions and serve over a bed of fluffy rice.
Notes
Marinate the chicken overnight for extra flavor. For easier thickening, let sauce simmer uncovered for the last 30 minutes.
