Description

A comforting and flavorful dish of tender chicken thighs cooked in a sweet and savory bourbon sauce, perfect for busy weeknights and gatherings.


Ingredients

  • 3 pounds Boneless, skinless Chicken Thighs
  • 1 cup Light Brown Sugar
  • 1 cup Soy Sauce
  • 1/3 cup Bourbon Whisky
  • 2 tablespoons Apple Cider Vinegar
  • 1/2 teaspoon Ground Ginger
  • 1 tablespoon Honey
  • 1/2 teaspoon Red Pepper Flakes
  • 4 Cloves Garlic (minced)
  • 3 tablespoons Cornstarch
  • 2 tablespoons Water
  • 1/4 cup Green Onions (for garnish)


Instructions

  1. Place the well-trimmed chicken thighs into the slow cooker.
  2. In a medium bowl, whisk the remaining ingredients, excluding the cornstarch, water, and green onions.
  3. Pour the sauce over the chicken thighs.
  4. Cover and cook on high for 4 hours or low for 6 hours.
  5. Once done, remove the chicken to a plate and chop roughly.
  6. In a separate bowl, mix the cornstarch and water until dissolved.
  7. Pour this mixture into the sauce in the crock pot and whisk to combine.
  8. Return the chopped chicken to the crock pot, stirring well. Cover and let it bubble for a few minutes before turning off the slow cooker.
  9. Sprinkle with chopped green onions and serve over a bed of fluffy rice.

Notes

Marinate the chicken overnight for extra flavor. For easier thickening, let sauce simmer uncovered for the last 30 minutes.
