Description

A hearty pasta dish featuring spicy Cajun chicken simmered in a creamy sauce, perfect for family dinners or potlucks.


Ingredients

  • 2 chicken breasts, skinless and boneless
  • 2 tbsp Cajun seasoning
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 8 oz cream cheese
  • 8 oz penne or fusilli pasta
  • 2 cups chicken broth
  • 2 green onions, chopped (for garnish)
  • 1/2 cup Parmesan cheese, grated (for serving)


Instructions

  1. Season the chicken breasts with Cajun seasoning, salt, and pepper.
  2. Place the seasoned chicken at the bottom of the slow cooker.
  3. Add diced tomatoes, onion, bell pepper, and chicken broth to the pot.
  4. Toss in the cream cheese, allowing it to melt into the mixture as it cooks.
  5. Secure the lid and slow cook on low for about 240 minutes, or until the chicken is tender.
  6. Once cooked, shred the chicken in the pot using two forks, mixing it back into the sauce.
  7. Stir in cooked pasta, combining until everything is well coated.
  8. Transfer to a serving dish and garnish with green onions and Parmesan cheese.

Notes

Leftover pasta can be stored in an airtight container in the fridge for up to 3 days. Reheat with a splash of chicken broth.
