Ingredients
- 2 chicken breasts, skinless and boneless
- 2 tbsp Cajun seasoning
- 1 can diced tomatoes
- 1 onion, chopped
- 1 bell pepper, chopped
- 8 oz cream cheese
- 8 oz penne or fusilli pasta
- 2 cups chicken broth
- 2 green onions, chopped (for garnish)
- 1/2 cup Parmesan cheese, grated (for serving)
Instructions
- Season the chicken breasts with Cajun seasoning, salt, and pepper.
- Place the seasoned chicken at the bottom of the slow cooker.
- Add diced tomatoes, onion, bell pepper, and chicken broth to the pot.
- Toss in the cream cheese, allowing it to melt into the mixture as it cooks.
- Secure the lid and slow cook on low for about 240 minutes, or until the chicken is tender.
- Once cooked, shred the chicken in the pot using two forks, mixing it back into the sauce.
- Stir in cooked pasta, combining until everything is well coated.
- Transfer to a serving dish and garnish with green onions and Parmesan cheese.
Notes
Leftover pasta can be stored in an airtight container in the fridge for up to 3 days. Reheat with a splash of chicken broth.
