Description

A comforting and hearty potato soup that is simple to prepare and perfect for chilly nights.


Ingredients

  • 4 large russet potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cups chicken broth (or vegetable broth for a lighter option)
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup beef bacon, cooked and crumbled (or a vegetarian alternative)


Instructions

  1. In a slow cooker, combine the diced potatoes, chopped onion, and chicken broth.
  2. Add garlic powder, onion powder, salt, and pepper. Stir gently.
  3. Cover and cook on low for about 6 hours, until potatoes are tender.
  4. After cooking, mash the potatoes slightly with a potato masher to create a thick consistency.
  5. Stir in shredded cheese and sour cream until well combined.
  6. Serve hot, topped with crumbled beef bacon, if desired.

Notes

For a richer flavor, sauté the onion until golden brown before adding to the slow cooker. Adjust the consistency by adding more broth if needed.
