Ingredients
- 4 large russet potatoes, peeled and diced
- 1 onion, chopped
- 4 cups chicken broth (or vegetable broth for a lighter option)
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 tablespoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup beef bacon, cooked and crumbled (or a vegetarian alternative)
Instructions
- In a slow cooker, combine the diced potatoes, chopped onion, and chicken broth.
- Add garlic powder, onion powder, salt, and pepper. Stir gently.
- Cover and cook on low for about 6 hours, until potatoes are tender.
- After cooking, mash the potatoes slightly with a potato masher to create a thick consistency.
- Stir in shredded cheese and sour cream until well combined.
- Serve hot, topped with crumbled beef bacon, if desired.
Notes
For a richer flavor, sauté the onion until golden brown before adding to the slow cooker. Adjust the consistency by adding more broth if needed.
