Description

A comforting one-pot meal featuring chicken, zesty Cajun spices, and creamy pasta.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, chopped
  • 2 tbsp Cajun seasoning
  • 1 cup bell peppers, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 8 oz cream cheese
  • 2 cups chicken broth
  • 8 oz pasta (penne or rotini)
  • ½ cup Parmesan cheese, grated
  • 2 green onions, chopped, for garnish


Instructions

  1. Chop chicken into bite-sized pieces, and dice the bell peppers and onion.
  2. Add the chicken, veggies, garlic, and sprinkle Cajun seasoning on top into the slow cooker.
  3. Pour chicken broth over the mixture.
  4. Cover and cook on low for 4 hours until the chicken is tender.
  5. Once cooked, mix in the cream cheese until smooth.
  6. Fold in the cooked pasta until evenly coated.
  7. Sprinkle with Parmesan and green onions before serving.

Notes

Enhance with a side salad or garlic bread. Try adding tomatoes or spinach for more nutrition.
