A comforting one-pot meal featuring chicken, zesty Cajun spices, and creamy pasta.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, chopped
- 2 tbsp Cajun seasoning
- 1 cup bell peppers, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 8 oz cream cheese
- 2 cups chicken broth
- 8 oz pasta (penne or rotini)
- ½ cup Parmesan cheese, grated
- 2 green onions, chopped, for garnish
Instructions
- Chop chicken into bite-sized pieces, and dice the bell peppers and onion.
- Add the chicken, veggies, garlic, and sprinkle Cajun seasoning on top into the slow cooker.
- Pour chicken broth over the mixture.
- Cover and cook on low for 4 hours until the chicken is tender.
- Once cooked, mix in the cream cheese until smooth.
- Fold in the cooked pasta until evenly coated.
- Sprinkle with Parmesan and green onions before serving.
Notes
Enhance with a side salad or garlic bread. Try adding tomatoes or spinach for more nutrition.
