A comforting and indulgent chicken pasta dish slow-cooked to perfection with a creamy sauce.
Ingredients
- 2 chicken breasts, boneless and skinless
- 1 cup onion, diced
- 1 bell pepper, diced (any color)
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup chicken broth
- 1 cup heavy cream or a non-dairy substitute
- 1 tablespoon Cajun seasoning
- 12 oz pasta (penne or rotini recommended)
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Place the chicken breasts at the bottom of the crock pot.
- Add in the diced onion, bell pepper, and minced garlic on top.
- Pour the canned tomatoes and chicken broth over the vegetables.
- Sprinkle Cajun seasoning, adding salt and pepper as desired.
- Cover and cook on low for about 4 hours or until the chicken is thoroughly cooked.
- Once cooked, shred the chicken with two forks and stir in the heavy cream.
- Cook the pasta separately according to package directions, then drain.
- Combine the pasta with the chicken mixture in the crock pot. Stir well to coat everything in the sauce.
- Garnish with fresh parsley before serving.
Notes
Serve with garlic bread or salad. Adding Parmesan enhances flavor. Freeze portions for later use.
