Description

A comforting and indulgent chicken pasta dish slow-cooked to perfection with a creamy sauce.


Ingredients

  • 2 chicken breasts, boneless and skinless
  • 1 cup onion, diced
  • 1 bell pepper, diced (any color)
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 cup heavy cream or a non-dairy substitute
  • 1 tablespoon Cajun seasoning
  • 12 oz pasta (penne or rotini recommended)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. Place the chicken breasts at the bottom of the crock pot.
  2. Add in the diced onion, bell pepper, and minced garlic on top.
  3. Pour the canned tomatoes and chicken broth over the vegetables.
  4. Sprinkle Cajun seasoning, adding salt and pepper as desired.
  5. Cover and cook on low for about 4 hours or until the chicken is thoroughly cooked.
  6. Once cooked, shred the chicken with two forks and stir in the heavy cream.
  7. Cook the pasta separately according to package directions, then drain.
  8. Combine the pasta with the chicken mixture in the crock pot. Stir well to coat everything in the sauce.
  9. Garnish with fresh parsley before serving.

Notes

Serve with garlic bread or salad. Adding Parmesan enhances flavor. Freeze portions for later use.
