This creamy Cajun chicken pasta dish combines succulent chicken, a rich sauce, and a hint of spice, making it a family favorite for any occasion.
Ingredients
- 1 lb chicken breast, cubed
- 1 bell pepper, diced (red or green)
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 2 tbsp Cajun seasoning
- 8 oz penne pasta
- 1 cup Parmesan cheese, grated
- Olive oil
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Heat a splash of olive oil in a skillet over medium heat. Sauté the chicken until golden brown.
- Combine the sautéed chicken, bell pepper, onion, garlic, chicken broth, heavy cream, Cajun seasoning, salt, and pepper in the slow cooker.
- Cook on low for 4 hours until the chicken is tender.
- About 30 minutes before serving, cook the penne pasta according to package instructions. Drain and set aside.
- Stir the pasta into the slow cooker mixture and mix well.
- Sprinkle the Parmesan cheese over the top and let it melt for a few minutes before serving.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. When reheating, add a splash of chicken broth to restore creaminess. You can also freeze portions for up to 2 months.
