Description

This creamy Cajun chicken pasta dish combines succulent chicken, a rich sauce, and a hint of spice, making it a family favorite for any occasion.


Ingredients

  • 1 lb chicken breast, cubed
  • 1 bell pepper, diced (red or green)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 tbsp Cajun seasoning
  • 8 oz penne pasta
  • 1 cup Parmesan cheese, grated
  • Olive oil
  • Salt and pepper, to taste
  • Fresh parsley, for garnish


Instructions

  1. Heat a splash of olive oil in a skillet over medium heat. Sauté the chicken until golden brown.
  2. Combine the sautéed chicken, bell pepper, onion, garlic, chicken broth, heavy cream, Cajun seasoning, salt, and pepper in the slow cooker.
  3. Cook on low for 4 hours until the chicken is tender.
  4. About 30 minutes before serving, cook the penne pasta according to package instructions. Drain and set aside.
  5. Stir the pasta into the slow cooker mixture and mix well.
  6. Sprinkle the Parmesan cheese over the top and let it melt for a few minutes before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. When reheating, add a splash of chicken broth to restore creaminess. You can also freeze portions for up to 2 months.
