Description

A flavorful and convenient slow-cooker dish featuring tender chicken and zesty spices, perfect for busy weeknights or gatherings.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 cup salsa (your choice of heat)
  • 1 packet taco seasoning
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, chopped
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, avocado


Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Pour the salsa over the chicken, followed by the taco seasoning.
  3. Add in the black beans, corn, diced bell peppers, and chopped onion. Give everything a gentle stir to combine.
  4. Cover and cook on low for 6 to 8 hours or on high for 4 hours, or until the chicken is fully cooked and tender.
  5. Once done, shred the chicken directly in the slow cooker using two forks. Stir to mix everything well.
  6. Serve it warm and add your favorite toppings!

Notes

For enhanced flavor, consider searing the chicken before placing it in the slow cooker. This is optional but recommended.
