Ingredients
- 2 lbs boneless, skinless chicken breasts
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 cup salsa (your choice of heat)
- 1 packet taco seasoning
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small onion, chopped
- Optional toppings: shredded cheese, sour cream, chopped cilantro, avocado
Instructions
- Place the chicken breasts at the bottom of the slow cooker.
- Pour the salsa over the chicken, followed by the taco seasoning.
- Add in the black beans, corn, diced bell peppers, and chopped onion. Give everything a gentle stir to combine.
- Cover and cook on low for 6 to 8 hours or on high for 4 hours, or until the chicken is fully cooked and tender.
- Once done, shred the chicken directly in the slow cooker using two forks. Stir to mix everything well.
- Serve it warm and add your favorite toppings!
Notes
For enhanced flavor, consider searing the chicken before placing it in the slow cooker. This is optional but recommended.
