Description

A comforting, slow-cooked meal featuring tender chicken thighs or breasts in a creamy Italian sauce with savory flavors.


Ingredients

  • 4-6 Chicken thighs or breasts (skinless)
  • 2 cups Beef broth
  • 8 oz Cream cheese
  • 2 tsp Italian seasoning
  • 3 cloves Garlic (fresh or powdered)
  • 1 cup Parmesan cheese (grated)
  • 2 cups Spinach (optional)
  • Salt and pepper to taste


Instructions

  1. In your slow cooker, place the chicken and season with salt, pepper, and Italian seasoning.
  2. Add minced garlic and beef broth to the pot.
  3. Cook on low for 360-480 minutes, or until the chicken is fork-tender.
  4. About 30 minutes before serving, mix in cream cheese and stir until melted and smooth.
  5. Add Parmesan cheese and spinach, allowing the spinach to wilt before serving.

Notes

For enhanced flavor, marinate the chicken overnight in Italian seasoning. Consider using different vegetables for added texture.
