Description

A rich and flavorful slow-cooked chicken dish with cream cheese, spinach, and sun-dried tomatoes that impresses every time.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 8 oz cream cheese, softened
  • 2 tsp Italian seasoning
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh or frozen spinach
  • 1/2 cup Parmesan cheese, grated


Instructions

  1. In a slow cooker, place the chicken breasts and season them with Italian seasoning, garlic, and salt.
  2. Pour the chicken broth over the chicken, ensuring it’s well-covered.
  3. Add the softened cream cheese directly on top of the chicken.
  4. Scatter the sun-dried tomatoes and spinach throughout the mixture.
  5. Cover and cook on low for about 4 hours or until the chicken is tender and easily shredded.
  6. As the cooking time nears its end, shred the chicken with two forks directly in the pot, then mix to combine all ingredients.
  7. Serve hot, garnished with Parmesan cheese.

Notes

This dish pairs well with garlic bread or over pasta/rice. Leftovers can be stored in the fridge for up to three days or frozen for up to three months.
