Description
A rich and flavorful slow-cooked chicken dish with cream cheese, spinach, and sun-dried tomatoes that impresses every time.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 cup chicken broth
- 8 oz cream cheese, softened
- 2 tsp Italian seasoning
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh or frozen spinach
- 1/2 cup Parmesan cheese, grated
Instructions
- In a slow cooker, place the chicken breasts and season them with Italian seasoning, garlic, and salt.
- Pour the chicken broth over the chicken, ensuring it’s well-covered.
- Add the softened cream cheese directly on top of the chicken.
- Scatter the sun-dried tomatoes and spinach throughout the mixture.
- Cover and cook on low for about 4 hours or until the chicken is tender and easily shredded.
- As the cooking time nears its end, shred the chicken with two forks directly in the pot, then mix to combine all ingredients.
- Serve hot, garnished with Parmesan cheese.
Notes
This dish pairs well with garlic bread or over pasta/rice. Leftovers can be stored in the fridge for up to three days or frozen for up to three months.
