Ingredients
- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 2 tsp Italian seasoning
- 1 cup sun-dried tomatoes, chopped
- 8 oz cream cheese (full-fat)
- 1 cup low-sodium chicken broth
- 2 cups fresh spinach
- ½ cup grated Parmesan cheese
- ½ tsp red pepper flakes (adjust to taste)
Instructions
- Prepare your Crock Pot; set it to low heat.
- Pat the chicken breasts dry, then season with salt, pepper, and Italian seasoning.
- Place the seasoned chicken at the bottom of the Crock Pot and scatter the sun-dried tomatoes on top.
- Mix the softened cream cheese with chicken broth until smooth and creamy, then pour over the chicken.
- Add spinach and sprinkle grated Parmesan cheese over everything.
- Cover and let it cook on low for 4 to 6 hours, or until the chicken is fork-tender.
Notes
If you’re short on time, you can substitute sun-dried tomatoes with fresh cherry tomatoes or use low-fat cream cheese for a lighter option.
