Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 2 tsp Italian seasoning
  • 1 cup sun-dried tomatoes, chopped
  • 8 oz cream cheese (full-fat)
  • 1 cup low-sodium chicken broth
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • ½ tsp red pepper flakes (adjust to taste)


Instructions

  1. Prepare your Crock Pot; set it to low heat.
  2. Pat the chicken breasts dry, then season with salt, pepper, and Italian seasoning.
  3. Place the seasoned chicken at the bottom of the Crock Pot and scatter the sun-dried tomatoes on top.
  4. Mix the softened cream cheese with chicken broth until smooth and creamy, then pour over the chicken.
  5. Add spinach and sprinkle grated Parmesan cheese over everything.
  6. Cover and let it cook on low for 4 to 6 hours, or until the chicken is fork-tender.

Notes
