Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt & black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 3/4 cup grated Parmesan cheese
  • 1/2 cup chopped sun-dried tomatoes (in oil, drained)
  • 2 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Fresh chopped parsley (for garnish)


Instructions

  1. Pat the chicken breasts dry and season both sides generously with salt and pepper.
  2. Heat olive oil in a skillet over medium heat and optionally sear the chicken for 2-3 minutes on each side until golden.
  3. In the Crock Pot, combine chicken broth, heavy cream, Parmesan cheese, garlic, sun-dried tomatoes, and crushed red pepper flakes if desired.
  4. Gently place the seasoned chicken into the sauce, ensuring it’s well coated.
  5. Cover and cook on low for 3.5 to 4 hours, or until the chicken reaches an internal temperature of 165°F.
  6. Garnish with chopped parsley before serving hot.

Notes

Use homemade stock for enhanced flavor. Searing the chicken adds a rustic flavor and beautiful color. Fresh herbs add brightness.
