Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt & black pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 cup chicken broth
- 1 cup heavy cream
- 3/4 cup grated Parmesan cheese
- 1/2 cup chopped sun-dried tomatoes (in oil, drained)
- 2 cloves garlic, minced
- 1/2 teaspoon crushed red pepper flakes (optional)
- Fresh chopped parsley (for garnish)
Instructions
- Pat the chicken breasts dry and season both sides generously with salt and pepper.
- Heat olive oil in a skillet over medium heat and optionally sear the chicken for 2-3 minutes on each side until golden.
- In the Crock Pot, combine chicken broth, heavy cream, Parmesan cheese, garlic, sun-dried tomatoes, and crushed red pepper flakes if desired.
- Gently place the seasoned chicken into the sauce, ensuring it’s well coated.
- Cover and cook on low for 3.5 to 4 hours, or until the chicken reaches an internal temperature of 165°F.
- Garnish with chopped parsley before serving hot.
Notes
Use homemade stock for enhanced flavor. Searing the chicken adds a rustic flavor and beautiful color. Fresh herbs add brightness.
