Description

Ingredients

  • 4 large potatoes, peeled and chopped
  • 1 medium onion, diced
  • 2 cups beef broth (or vegetable broth for a lighter flavor)
  • 1 cup shredded cheese (cheddar or a blend)
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil (optional, for sautéing the onion)


Instructions

  1. Sauté the diced onion in a bit of olive oil over medium heat until translucent and fragrant.
  2. Layer the chopped potatoes in the slow cooker, followed by the sautéed onions.
  3. Pour in the beef broth, ensuring the potatoes are well covered.
  4. Sprinkle in the garlic powder, salt, and pepper. Give it a gentle stir to combine.
