Description

A comforting slow cooker dish featuring tender chicken and creamy white beans, infused with bold spices.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes, with green chilies
  • 1 medium onion, diced
  • 2-3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Optional garnishes: cilantro, avocado, cheese, sour cream


Instructions

  1. In the slow cooker, combine the chicken, white beans, diced tomatoes, onion, garlic, chicken broth, cumin, chili powder, salt, and pepper.
  2. Stir the mixture well to ensure the ingredients are evenly distributed.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Before serving, shred the chicken with two forks and mix everything well.
  5. Adjust seasoning as needed, and garnish with your choice of toppings.

Notes

For added flavor, sauté onions and garlic before adding them to the slow cooker. Experiment with proteins and vegetables to customize the dish.
