Description
A comforting and hearty dish of slow-cooked black-eyed peas, perfect for weeknight dinners or special occasions.
Ingredients
- 1 pound black-eyed peas
- 4 cups chicken broth
- 1 onion, chopped
- 4 slices of bacon, diced
- 2 garlic cloves, minced
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- Optional: Chopped green onions for garnish
Instructions
- Rinse and soak the black-eyed peas according to package instructions, then drain them.
- In a skillet over medium heat, cook the diced bacon until it’s nice and crispy.
- Once the bacon is done, toss in the chopped onion and garlic. Sauté until the onion turns translucent.
- In the crockpot, combine the black-eyed peas, chicken broth, the sautéed bacon mixture, smoked paprika, salt, pepper, and bay leaf.
- Stir everything to mix well. Cover and set the crockpot to cook.
- Allow it to cook on low for 6-8 hours or on high for 4 hours, until the peas are nice and tender.
- Before serving, remove the bay leaf and top with optional chopped green onions.
Notes
For a vegetarian option, replace bacon with turkey bacon or olive oil. Serve over rice or with cornbread.
