Description

Ingredients

  • 2 lbs boneless chicken thighs
  • 2 tablespoons butter
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 cup tomato sauce
  • 1 can coconut milk
  • 1 tablespoon garam masala
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon turmeric
  • Fresh cilantro, for serving


Instructions

  1. In the slow cooker, add the chopped onion, garlic, and ginger.
  2. Place the chicken thighs over the aromatics, seasoning liberally with the spices.
  3. Pour in the tomato sauce and coconut milk, ensuring everything is well combined.
  4. Cover and cook on low for 6 hours, or until the chicken is tender and shreds easily.
  5. Before serving, stir in the butter to enrich the sauce.

Notes

For a thicker sauce, remove the lid during the last hour of cooking. Consider marinating the chicken in spices and yogurt for enhanced flavor.
