Description

Effortless and delicious chicken tacos made in a slow cooker, perfect for busy evenings and customizable for everyone’s taste.


Ingredients

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 packet taco seasoning (or homemade blend)
  • 1 cup chicken broth
  • 1 can (15 oz) diced tomatoes (with juices)
  • 1 can (4 oz) diced green chilies (optional)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Tortillas for serving
  • Optional toppings: avocado, cheese, salsa, lettuce, sour cream


Instructions

  1. Place the chopped onion and minced garlic at the bottom of the slow cooker.
  2. Add the chicken breasts on top and sprinkle the taco seasoning evenly over the chicken.
  3. Pour the chicken broth and diced tomatoes (including their juices) over the chicken.
  4. If using, add the diced green chilies for extra flavor.
  5. Cover and cook on low for 360 minutes, or on high for 240 minutes, until the chicken is cooked through and easily shreds with a fork.
  6. Once done, shred the chicken using two forks and stir to combine with the sauce.
  7. Serve in warm tortillas and add your favorite toppings.

Notes

Leftover chicken can be stored in an airtight container in the refrigerator for up to 4 days. Freeze for up to 3 months. Thaw overnight before reheating.
