Description
Effortless and delicious chicken tacos made in a slow cooker, perfect for busy evenings and customizable for everyone’s taste.
Ingredients
- 2 pounds boneless, skinless chicken breasts or thighs
- 1 packet taco seasoning (or homemade blend)
- 1 cup chicken broth
- 1 can (15 oz) diced tomatoes (with juices)
- 1 can (4 oz) diced green chilies (optional)
- 1 onion, chopped
- 2 cloves garlic, minced
- Tortillas for serving
- Optional toppings: avocado, cheese, salsa, lettuce, sour cream
Instructions
- Place the chopped onion and minced garlic at the bottom of the slow cooker.
- Add the chicken breasts on top and sprinkle the taco seasoning evenly over the chicken.
- Pour the chicken broth and diced tomatoes (including their juices) over the chicken.
- If using, add the diced green chilies for extra flavor.
- Cover and cook on low for 360 minutes, or on high for 240 minutes, until the chicken is cooked through and easily shreds with a fork.
- Once done, shred the chicken using two forks and stir to combine with the sauce.
- Serve in warm tortillas and add your favorite toppings.
Notes
Leftover chicken can be stored in an airtight container in the refrigerator for up to 4 days. Freeze for up to 3 months. Thaw overnight before reheating.
