Description

A comforting and creamy dish featuring tender chicken and cheesy tortellini, perfect for family dinners or weekend brunches.


Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 4 cups low-sodium chicken broth
  • 8 oz cream cheese (full-fat recommended for creaminess)
  • 12 oz frozen cheese tortellini
  • 2 cups fresh spinach (or 1 cup frozen)
  • 2 tsp dried Italian herbs (basil, oregano, thyme)
  • Salt and pepper to taste


Instructions

  1. Dice the chicken into bite-sized pieces and mince the garlic.
  2. In the crockpot, combine the diced chicken, minced garlic, chicken broth, cream cheese, and dried herbs. Mix well.
  3. Cover and cook on low for 6 hours or high for 3 hours.
  4. About 30 minutes before serving, stir in the frozen tortellini and fresh spinach.
  5. Taste and adjust seasoning with salt and pepper before serving.

Notes

Serve with freshly grated Parmesan cheese and a side of garlic bread or salad for balance.
