Description

A comforting dish combining tender chicken with the rich creaminess of coconut milk and zesty lime.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (14 oz) coconut milk
  • 1/4 cup lime juice
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 cup fresh cilantro, chopped (optional garnishing)
  • Jasmine rice for serving


Instructions

  1. Place the chicken breasts in your crockpot.
  2. In a separate bowl, whisk together the coconut milk, lime juice, minced garlic, salt, black pepper, and paprika until well-blended.
  3. Pour the coconut mixture over the chicken, ensuring it’s well-coated.
  4. Cover your crockpot and set it to cook on low for 6 to 8 hours or high for 3 to 4 hours until the chicken is tender.
  5. Just before serving, shred the chicken in the pot using two forks to soak up all the flavorful juices.
  6. Serve over steaming jasmine rice and sprinkle with fresh cilantro.

Notes

For added moisture, consider using chicken thighs instead of breasts. Serve with a crisp salad or steamed vegetables.
