Ingredients
- 4 boneless, skinless chicken breasts
- 1 can (14 oz) coconut milk
- 1/4 cup lime juice
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/4 cup fresh cilantro, chopped (optional garnishing)
- Jasmine rice for serving
Instructions
- Place the chicken breasts in your crockpot.
- In a separate bowl, whisk together the coconut milk, lime juice, minced garlic, salt, black pepper, and paprika until well-blended.
- Pour the coconut mixture over the chicken, ensuring it’s well-coated.
- Cover your crockpot and set it to cook on low for 6 to 8 hours or high for 3 to 4 hours until the chicken is tender.
- Just before serving, shred the chicken in the pot using two forks to soak up all the flavorful juices.
- Serve over steaming jasmine rice and sprinkle with fresh cilantro.
Notes
For added moisture, consider using chicken thighs instead of breasts. Serve with a crisp salad or steamed vegetables.
