Ingredients
- 4 boneless, skinless chicken breasts
- 1 can (13.5 oz) coconut milk
- Juice and zest of 2 limes
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 tablespoon soy sauce or tamari
- 1 tablespoon honey or maple syrup
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Sear the chicken: Heat a skillet over medium-high heat. Season the chicken breasts with salt and pepper, then sear them for about 3-4 minutes on each side until browned.
- Prepare the sauce: In a bowl, mix together coconut milk, lime juice and zest, garlic, ginger, soy sauce, and honey.
- Layer in the crockpot: Place the seared chicken at the bottom of the crockpot and pour the coconut mixture over the top.
- Cook low and slow: Cover and cook on low for 240 minutes or high for 120 minutes, until the chicken is cooked through and tender.
- Finish and serve: When ready, shred the chicken right in the pot and mix it well with the sauce. Garnish with fresh cilantro before serving.
Notes
For best results, use fresh lime juice and consider using chicken thighs for richer flavor.
