Ingredients
- 2 pounds of boneless, skinless chicken breasts
- 1 cup of diced onions
- 2 cloves of garlic, minced
- 1 can of chicken broth
- 1 cup of heavy cream
- 2 cups of pasta (penne or rotini)
- 1 cup of grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Place the chicken breasts in the slow cooker.
- Add diced onions and minced garlic on top of the chicken.
- Pour the chicken broth over the mixture. Season with salt and pepper.
- Cover and cook on low for about 4 hours or until the chicken is tender.
- Once the chicken is cooked, shred it directly in the slow cooker.
- Stir in the heavy cream and Parmesan cheese, mixing well until smooth.
- Cook the pasta separately according to package instructions, then drain.
- Combine the cooked pasta with the creamy chicken mixture. Stir to coat well.
- Serve warm, garnished with parsley if desired.
Notes
For a delightful presentation, serve in bowls topped with extra Parmesan and freshly chopped parsley. Great with a side salad and crusty bread.
