Description

A warm and hearty soup with creamy texture and rich flavor, perfect for cozy dinners or satisfying lunches.


Ingredients

  • 1 lb ground beef
  • 4 cups potatoes, diced (Russets recommended)
  • 1 onion, chopped
  • 3 cups beef broth (low-sodium recommended)
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste


Instructions

  1. Brown the ground beef and chopped onion in a skillet. Drain excess fat.
  2. In a crockpot, layer in the beef, diced potatoes, beef broth, garlic powder, salt, and pepper.
  3. Set the crockpot to low and let it cook for 6-8 hours, or high for 3-4 hours, until the potatoes are tender.
  4. About 30 minutes before serving, stir in the heavy cream and shredded cheese.
  5. Allow it to finish cooking until the cheese is fully melted and creamy.
  6. Serve warm and enjoy!

Notes

Garnish with fresh parsley and serve with crusty bread for the best experience. Can be frozen for up to 3 months.
