Ingredients
- 1 lb ground beef
- 4 cups potatoes, diced (Russets recommended)
- 1 onion, chopped
- 3 cups beef broth (low-sodium recommended)
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Brown the ground beef and chopped onion in a skillet. Drain excess fat.
- In a crockpot, layer in the beef, diced potatoes, beef broth, garlic powder, salt, and pepper.
- Set the crockpot to low and let it cook for 6-8 hours, or high for 3-4 hours, until the potatoes are tender.
- About 30 minutes before serving, stir in the heavy cream and shredded cheese.
- Allow it to finish cooking until the cheese is fully melted and creamy.
- Serve warm and enjoy!
Notes
Garnish with fresh parsley and serve with crusty bread for the best experience. Can be frozen for up to 3 months.
