Description

A comforting slow-cooked dish featuring juicy chicken breasts and flavor-infused potatoes, perfect for weeknight dinners.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 medium potatoes, diced
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. Layer the diced potatoes at the bottom of your crockpot.
  2. Season the chicken breasts with salt, pepper, and Italian seasoning. Place them atop the potatoes.
  3. In a mixing bowl, combine the minced garlic, chicken broth, and Parmesan cheese. Pour this mixture over the chicken and potatoes.
  4. Cover the crockpot and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and cooked through.
  5. Garnish with fresh parsley if desired and serve hot.

Notes

For enhanced flavors, consider adding white wine to the broth or a tablespoon of cream cheese during the last cooking phase. Serve with a salad or steamed broccoli.
