Ingredients
- 4 boneless, skinless chicken breasts
- 4 medium potatoes, diced
- 1 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Layer the diced potatoes at the bottom of your crockpot.
- Season the chicken breasts with salt, pepper, and Italian seasoning. Place them atop the potatoes.
- In a mixing bowl, combine the minced garlic, chicken broth, and Parmesan cheese. Pour this mixture over the chicken and potatoes.
- Cover the crockpot and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and cooked through.
- Garnish with fresh parsley if desired and serve hot.
