Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and sliced
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper, to taste
- Juice of 1 lemon
- Fresh parsley, for garnish
Instructions
- Begin by placing the chicken breasts at the bottom of the crockpot.
- In a bowl, mix the tomatoes, olives, onion, garlic, oregano, thyme, paprika, salt, and pepper.
- Pour this mixture over the chicken, ensuring everything is evenly distributed.
- Squeeze the lemon juice over the top for added brightness and flavor.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender and easily shreds.
- Once cooked, use two forks to shred the chicken directly in the crockpot or remove it to shred on a cutting board before returning it.
- Stir everything together and serve warm.
Notes
For a spicy kick, add red pepper flakes or cayenne pepper. Store leftovers in an airtight container for up to 3-4 days.
