Description

A delightful Crockpot Greek Chicken recipe featuring tender chicken slow-cooked with spices, olives, and tomatoes for a hearty Mediterranean meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Juice of 1 lemon
  • Fresh parsley, for garnish


Instructions

  1. Begin by placing the chicken breasts at the bottom of the crockpot.
  2. In a bowl, mix the tomatoes, olives, onion, garlic, oregano, thyme, paprika, salt, and pepper.
  3. Pour this mixture over the chicken, ensuring everything is evenly distributed.
  4. Squeeze the lemon juice over the top for added brightness and flavor.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender and easily shreds.
  6. Once cooked, use two forks to shred the chicken directly in the crockpot or remove it to shred on a cutting board before returning it.
  7. Stir everything together and serve warm.

Notes

For a spicy kick, add red pepper flakes or cayenne pepper. Store leftovers in an airtight container for up to 3-4 days.
